Farm shares and summer dinners

At this time of the year one of my favorite meals is Thursday dinner. It may seem like an odd day of the week but Thursdays happen to be the day that I pick up my CSA farm share. And it also happens that August has some of my favorite vegetables - tomatoes, sweet corn, basil, kale, Swiss chard, zucchini, and squash. The two things I'll eat that night are the corn and the tomatoes. Sweet corn, cooked just long enough to remain crisp and sweet with just a little salt. Field or heirloom tomatoes served with a little salt, pepper, balsamic vinegar, and olive oil. Add a little crusty bread and that's a meal for a warm summer evening.

Throughout the week the other vegetables find their way into different dishes. This week the Swiss chard found its way into a simple, savory tart that I found in Patricia Well's Bistro Cooking. Less like a quiche than you might think, it was easy to pull together. Served with a simple salad it was another great summer dinner.


I'm also planning to make a couple of different pestos and I have something special planned for the eggplant. But those are posts for another day.

It's official, I wanna eat at your house Thursday night. I've been craving and eating sweet corn all summer! I really need to replicate the corn that is sold next to Giovanni's!!
