Comforting Soups to Celebrate National Soup Month

Three different bowls of soup

January 3, 2022

Happy New Year! It’s January and even in Hawaii there is a chill in the air (pause as I hear my Boston friends burst out in laughter). Regardless of the temperature, it’s “officially” National Soup Month – one of those commercial “celebrations” created by none other than Campbell’s in 1986. I need no other excuse to share with you some of my favorite recipes. Any one of these soups will keep your tummy full and warm you body and soul. For more ideas, check out the full listing.

Bowl of Carrot Soup

Carrot Soup

This easy and satisfying carrot soup works well as a starter or as a main meal. It’s a great way to use up that bag of carrots at the back of your produce drawer. This soup also freezes well.

This popular Hawaii soup combines Portuguese sausage (linguica), ham hocks, veggies, and macaroni into a hearty, soul-warming, and filling soup.

Easy Chicken Tortilla Soup

This non-traditional tortilla soup makes a satisfying weeknight meal. Store-bought rotisserie chicken, packaged tortilla chips, and pantry staples make for quick and easy prep-to-table.

This chicken and rice soup brings in additional heartiness and protein in the form of chickpeas and lentils. The Mediterranean flavors are enhanced with tomatoes and herbs.

This lower carb version of the popular Zuppa Toscana replaces potatoes with cauliflower for an equally delicious soup.

Bowl of Butternut Squash Velvet soup

Butternut Squash Velvet Soup

This smooth butternut squash soup with just a hint of smoky bacon is made elegant with a touch of heavy cream and garnished with a few crunchy pepitas.
